Sheet Pan Smoked Sausage, Cabbage & Potatoes

Some dinners need babysitting. This sheet pan sausage, cabbage and potato bake does not. Toss it all together, let the oven work its magic, and come back to crispy, caramelized comfort food that tastes like you tried way harder than you did.

Yield: 3-4 Servings


INGREDIENTS

  • ½ head cabbage

  • 1 large onion (any color)

  • 1½ to 2 cups potatoes (mini gold, red, sweet or russet all work)

  • 1 (12 oz) package precooked smoked beef sausage

  • 2 to 3 tbsp olive oil, divided

SEASONINGS

  • 3 tbsp brown sugar

  • 2 tbsp paprika

  • 2 tbsp garlic powder

  • 2 tbsp onion powder

  • 1 tbsp kosher salt

  • 1 tbsp dried thyme leaves

  • 1 tsp MSG

  • 1 tsp black pepper

TO SERVE

  • Sour cream

INSTRUCTIONS

PREP

Preheat the oven to 400°F (200°C). Line your biggest baking sheet with parchment paper.

Chop the cabbage, onion and potatoes into roughly 1-inch pieces.

Slice the sausage on a diagonal about ¼ inch thick.

SEASON
Add everything to the baking sheet, drizzle with about 2 tbsp olive oil and toss to coat.

Add all the seasonings plus an extra drizzle of olive oil. Massage and mix with your hands until everything is well coated.

Spread everything into an even layer. It's okay if the pan is a little crowded.

ROAST
Roast for 45 min to 1 hr, until the sausage is getting crispy and the potatoes are fork tender.

Serve with sour cream on the side.
